Preparation

  1. Preheat the oven to 350 degrees F and line an 8x8-inch pan with parchment paper. Be sure to avoid using glass pans, as they may result in the bottom of the crust burning.
  2. Start by preparing the dough: in a bowl, whisk together the almond flour, coconut flour and salt. Then add the butter, pure maple syrup and almond extract. Mix until a homogeneous dough is formed. Press the dough evenly with your hands into the prepared pan and bake for 15 minutes.
  3. While the dough is baking, you can prepare the filling: in a medium bowl, whisk together the lemon zest, lemon juice, pure maple syrup, eggs and sifted coconut flour. Be sure to beat well to avoid visible egg whites.
  4. Once the crust is baked, slowly pour the filling over it. It is crucial not to let the crust cool first.
  5. Reduce the oven temperature to 165 degrees C, place the bars immediately in the oven and bake for 20-25 minutes, or until the filling is firm and doesn't move. Cool completely on a rack and then refrigerate for at least 4 hours to firm up the bars.
  6. When ready to serve, use a sharp knife to cut into 12 bars. It is recommended to decorate with icing sugar and a touch of lemon zest before serving - enjoy!
